Kombucha is a drink that's been brewed for over 2,000 years using simple, humble ingredients to produce a healthy and delicious fermented beverage. 


For me the integrity of these humble origins should be preserved. Of course modern methods and equipment get introduced over time (fridges weren't around 2,000 years ago!) but the simple foundations of using sweetened tea with some liquid from the previous batch remain.


I would never use artificial ingredients such as sweeteners or flavourings. 


Sweetness comes from sugar, and through the fermentation process the majority of sugar is consumed by the brewing process. I wouldn't use stevia or aspartame to make it a 'diet kombucha' (some big brands use stevia to make their drink 'sugar free'). I appreciate these products have a place for some people, but I won't ever be using them in Guttzee.


Flavouring comes from the natural product that is introduced to the kombucha - a strawberry flavour comes from a strawberry not a lab produced chemical that tastes a lot like a strawberry but is cheaper to produce and has a long shelf life. 


When I add flavour to Guttzee kombucha it comes from a natural product. The elderflower flavour comes from dried elderflower 'tea' which happily sits in the kombucha permeating their sweet, floral flavour through the drink. No extracts or flavourings. I've experimented with how much to use to balance the flavour without making it overpowering (plenty of trial and error!). For me that's all part of the process.  


No shortcuts, no compromises and never, ever, anything artificial!
